Instructions

  1. Prepare the phin filter: Take apart the phin filter by unscrewing the lid and removing the chamber. Place the chamber on top of your serving glass.
  2. Heat water: The ideal water temperature for brewing Vietnamese iced coffee is around 195-200°F (90-95°C).
  3. Preheat the phin filter: Pour 20 ml of hot water into your empathy phin filter. Discard the water from your cup. 
  4. Sweeten with condensed milk: When you throw out water that you used to preheat the filter, add 2-3 tablespoons of condensed milk into the glass and place the filter on top of the glass again.

Use the back of a spoon to gently press down on the coffee grounds to create an even surface. Place the filter press on top of the coffee grounds, then screw the lid back onto the chamber.
  6. Start brewing: Pour a small amount of hot water (about 20 ml) into the chamber of the phin filter to pre-infuse the coffee. Allow it to bloom for 30 seconds.
  7. Add the remaining water: Slowly pour the rest of the hot water into the chamber, filling it to the top. Close the lid and let the coffee slowly drip through the filter into the glass.
  8. Mix and cool: Once the coffee has finished dripping, give it a good stir to combine the condensed milk and coffee. Add a handful of ice cubes to the glass to cool down the coffee and create that signature iced coffee experience.
